Favorite Mexican Recipe: Chicken Enchiladas
One of my favorite Mexican recipes is Chicken Enchiladas. This dish is not only delicious but also comforting and easy to make. Enchiladas are a staple in Mexican cuisine, featuring corn tortillas rolled around a filling and topped with a flavorful sauce. Here’s how to prepare these delightful enchiladas at home.
Ingredients
- 2 cups cooked, shredded chicken
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 can (10 oz) red enchilada sauce
- 8 corn tortillas
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Start by preheating your oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened.
- Add the shredded chicken to the skillet, along with half of the enchilada sauce. Season with salt and pepper, mixing well. Remove from heat.
- In a separate dish, pour a little enchilada sauce to coat the bottom of a baking dish.
- Warm the corn tortillas in a dry skillet or microwave to make them pliable.
- Fill each tortilla with the chicken mixture, a sprinkle of cheese, and roll it tightly. Place seam-side down in the baking dish.
- Once all tortillas are filled and placed in the dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
