Favorite Mexican Recipe: Chicken Enchiladas

One of my favorite Mexican recipes is Chicken Enchiladas. This dish is not only delicious but also comforting and easy to make. Enchiladas are a staple in Mexican cuisine, featuring corn tortillas rolled around a filling and topped with a flavorful sauce. Here’s how to prepare these delightful enchiladas at home.

Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 can (10 oz) red enchilada sauce
  • 8 corn tortillas
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Start by preheating your oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened.
  3. Add the shredded chicken to the skillet, along with half of the enchilada sauce. Season with salt and pepper, mixing well. Remove from heat.
  4. In a separate dish, pour a little enchilada sauce to coat the bottom of a baking dish.
  5. Warm the corn tortillas in a dry skillet or microwave to make them pliable.
  6. Fill each tortilla with the chicken mixture, a sprinkle of cheese, and roll it tightly. Place seam-side down in the baking dish.
  7. Once all tortillas are filled and placed in the dish, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  9. Garnish with fresh cilantro before serving.

These Chicken Enchiladas are perfect for any occasion, whether it’s a family dinner or a gathering with friends. The combination of flavors and textures is sure to impress anyone who has the pleasure of enjoying this delightful dish!
